Easy Mexican Red Pickled Onions

This is without a doubt the easiest way to make Mexican Red Pickled Onions. It is so quick and easy, that we always have a batch of these in the fridge.
It is also the way that these are made in every street taco stand I have asked at in Mexico.
Some people will add chopped jalapeño or habanero for some heat, others will add pickling spices or vinegar, but none of this is necessary. This is so simple and delicious, there is no reason to complicate it.
Mexican Red Pickled Onions
It doesn't get any easier than this. Three ingredients, no cooking, and only a couple of minutes prep time for an amazing fresh condiment you can keep in the fridge and add to so many dishes.

Ingredients
- 1 Red Onion
- 1 Lime
- 1 tsp Salt We like Kosher Salt
Instructions
- Cut the onion in half length wise and slice thinly1 Red Onion
- Place the sliced onion in the glass jar, and add the salt1 tsp Salt
- Juice the lime and add this to the jar1 Lime
- Close the lid, and shake vigorously. Place in a fridge for an hour, shaking every 20 minutes.
Notes
Do you like it a little spicy? Some people like to add some habanero either very thinly sliced, very finely chopped to add level of spice to these onions. We prefer to add these separately if we want them, which tends to be the more Mexican way.
