Mexican Red Pickled Onions

It doesn't get any easier than this. Three ingredients, no cooking, and only a couple of minutes prep time for an amazing fresh condiment you can keep in the fridge and add to so many dishes.

Ingredients

  • 1 Red Onion
  • 1 Lime
  • 1 tsp Salt We like Kosher Salt

Instructions

  • Cut the onion in half length wise and slice thinly

  • Place the sliced onion in the glass jar, and add the salt
    1 tsp Salt
  • Juice the lime and add this to the jar
    1 Lime
  • Close the lid, and shake vigorously. Place in a fridge for an hour, shaking every 20 minutes.

Notes

Do you like it a little spicy? Some people like to add some habanero either very thinly sliced, very finely chopped to add level of spice to these onions. We prefer to add these separately if we want them, which tends to be the more Mexican way.
