Ingredients

  • 2 cups cremini mushrooms finely chopped
  • 1 cup cooked quinoa
  • 1 tbsp flaxseed + 3 tbsp water flax egg
  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 tsp smoked paprika
  • ½ cup gluten-free breadcrumbs
  • 1 tbsp Worcestershire sauce or tamari
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  • Prep: Make flax egg and set aside. Cook quinoa if not already prepared.
  • Sauté: Heat 1 tbsp oil in a pan. Cook onions, garlic, and mushrooms until soft. Season with paprika, salt, and pepper.
  • Mix: In a bowl, combine mushrooms, quinoa, flax egg, breadcrumbs, and Worcestershire sauce. Let rest 10 mins.
  • Shape: Form into 4 patties (½-inch thick).
  • Cook: Heat remaining oil in a pan. Cook patties 4-5 mins per side until golden.

Notes

  • Binder Tip: If mixture is too wet, add more breadcrumbs.
  • Make Ahead: Refrigerate uncooked patties for up to 2 days.
  • Grill Option: Brush patties with oil to prevent sticking.
