Ingredients

  • 12 oz 340g elbow macaroni
  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • 3 cups shredded white cheddar cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: ½ cup cooked bacon steamed broccoli, or breadcrumbs for topping

Instructions

  • Cook the pasta in salted boiling water until al dente. Drain and set aside.
  • In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes.
  • Gradually whisk in the milk and cook until the sauce thickens and simmers.
  • Reduce heat to low and stir in the shredded cheese until melted and smooth. Season with salt and pepper.
  • Add the cooked pasta to the sauce and stir to combine. Add optional mix-ins if desired.
  • Serve immediately, garnished with extra cheese or breadcrumbs.

Notes

  • For extra creaminess, use a blend of white cheddar and cream cheese.
  • Add a pinch of nutmeg or mustard powder for a flavor boost.
  • To make ahead, prepare the sauce and pasta separately, then combine and bake before serving.
  • Freeze leftovers in an airtight container for up to 2 months.
  • For a crispy topping, sprinkle breadcrumbs over the mac and cheese and broil for 2-3 minutes.
