Instructions
Cook the pasta in salted boiling water until al dente. Drain and set aside.
In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes.
Gradually whisk in the milk and cook until the sauce thickens and simmers.
Reduce heat to low and stir in the shredded cheese until melted and smooth. Season with salt and pepper.
Add the cooked pasta to the sauce and stir to combine. Add optional mix-ins if desired.
Serve immediately, garnished with extra cheese or breadcrumbs.
Notes
For extra creaminess, use a blend of white cheddar and cream cheese.
Add a pinch of nutmeg or mustard powder for a flavor boost.
To make ahead, prepare the sauce and pasta separately, then combine and bake before serving.
Freeze leftovers in an airtight container for up to 2 months.
For a crispy topping, sprinkle breadcrumbs over the mac and cheese and broil for 2-3 minutes.
