Ingredients

  • 4 large bell peppers any color
  • 2 cups shredded cooked chicken
  • ½ cup buffalo sauce
  • 4 oz cream cheese softened
  • 1 cup shredded mozzarella cheese divided
  • 2 green onions chopped (for garnish)

Instructions

  • Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
  • In a bowl, mix shredded chicken, buffalo sauce, cream cheese, and ½ cup mozzarella.
  • Stuff the mixture into the bell peppers and top with remaining mozzarella.
  • Cover with foil and bake for 25 minutes. Remove foil and bake for 10-15 more minutes.
