Ingredients

For the Noodles:

  • 1 lb noodles
  • 1/2 cup green onions chopped

For the Sauce:

  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tsp ground ginger
  • 1/2 tsp chili garlic sauce
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper

Optional Toppings:

  • Sesame seeds
  • Bell pepper sliced
  • Broccoli florets

Instructions

  • Cook noodles according to package directions until al dente. Drain and set aside.
  • In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, ground ginger, chili garlic sauce, garlic powder, and black pepper until well combined.
  • In a large bowl or wok, toss the cooked noodles with the prepared sauce until evenly coated.
  • Add chopped green onions and toss to combine.
  • Serve immediately, garnished with desired toppings such as sesame seeds, bell peppers, or broccoli.

Notes

Use any type of noodles - rice noodles, lo mein, or even spaghetti work well
For added protein, toss in cooked chicken, beef, shrimp, or cubed tofu
Make it spicier by increasing the chili garlic sauce to taste
This dish tastes even better the next day - store leftovers in the refrigerator for up to 3 days
To make it gluten-free, use tamari instead of soy sauce and rice or shirataki noodles
