Ingredients

  • 2 medium zucchini sliced into half-moons
  • 8 oz mushrooms sliced
  • 1 medium onion sliced (optional)
  • 1 bell pepper sliced (optional)
  • 2 cloves garlic minced (optional)
  • 2 tablespoons olive oil or butter
  • 2 tablespoons soy sauce
  • Salt to taste
  • Black pepper to taste

Instructions

  • Heat olive oil or butter in a wok or large skillet over medium-high heat.
  • Add zucchini, mushrooms, onions, and garlic to the skillet.
  • Sauté for 5-6 minutes, stirring frequently, until vegetables are just tender.
  • Add bell pepper if using and sauté for another 2 minutes.
  • Stir in soy sauce, salt, and black pepper.
  • Cook for 1 additional minute to combine flavors.
  • Remove from heat and serve immediately.

Notes

Don't overcook the zucchini to maintain a slight crunch and prevent it from becoming mushy
Feel free to add other seasonal vegetables like carrots, snap peas, or broccoli
Garnish with sesame seeds, fresh herbs like parsley or cilantro, or green onions for extra flavor
