Ingredients

  • 1 tbsp olive oil
  • 1 large onion chopped
  • 1 tsp fresh ginger grated
  • ½ tsp ground cumin
  • ¼ tsp cinnamon
  • 3 medium beets about 500g, peeled and diced
  • 2 carrots chopped
  • 4 cups vegetable stock
  • Juice and zest of 1 large orange
  • Salt and pepper to taste
  • Optional: ¼ cup coconut milk for creaminess

Instructions

  • Heat oil in a pot over medium heat. Sauté onion until soft (5 mins).
  • Add ginger, cumin, and cinnamon; cook 1 minute.
  • Stir in beets, carrots, and stock. Simmer 20-25 mins.
  • Remove from heat. Blend with orange juice and zest until smooth.
  • Season to taste. Serve warm with desired toppings.
