about 500g, peeled and diced

vegetable stock
Juice and zest of 1 large orange
Salt and pepper to taste
Optional: ¼ cup coconut milk
for creaminess
Instructions
Heat oil in a pot over medium heat. Sauté onion until soft (5 mins).
Add ginger, cumin, and cinnamon; cook 1 minute.
Stir in beets, carrots, and stock. Simmer 20-25 mins.
Remove from heat. Blend with orange juice and zest until smooth.
Season to taste. Serve warm with desired toppings.
Notes
For a Chilled Version
: Refrigerate for 2+ hours and serve cold.
