  • 1 tablespoon agave nectar or maple syrup
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • 8 –10 thick slices day old/stale bread
  • Oil for cooking

Instructions

  • In a blender or mixing bowl, combine almond milk, chickpea flour, agave nectar, cinnamon, vanilla extract, and salt. Blend or whisk until completely smooth.
  • Heat oil in a large pan or griddle over medium heat.
  • Dip each bread slice into the batter, ensuring both sides are well-coated.
  • Cook for 2-3 minutes per side, until golden brown and crispy.
  • Serve immediately with maple syrup, fresh fruit, or powdered sugar.

Notes

Day-old bread works best as it absorbs the batter without falling apart
Let the batter rest for 5 minutes after mixing to allow chickpea flour to fully hydrate
