Instructions
Prepare the Base: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes to form a roux.
Add Milk: Gradually whisk in milk and cook until slightly thickened.
Melt Cheese: Reduce heat to low. Add cheeses in small batches, stirring until melted and smooth.
Add Mix-Ins: Stir in tomatoes, jalapeños, cumin, and chili powder. Simmer for 2-3 minutes.
