Ingredients

  • 2 large sweet potatoes peeled (optional)
  • 2 cans 400g/14oz each black beans, drained
  • 200 g/7oz vegan cheese shredded
  • ½ cup tomato sauce
  • ¾ cup tomato sauce
  • 1 tbsp olive oil
  • Salt to taste
  • Oregano to taste
  • Smoked paprika to taste
  • Cumin to taste

Instructions

  • Preheat oven to 180°C/355°F. Grease a baking dish with olive oil.
  • Spread ½ cup tomato sauce in the bottom of the prepared baking dish.
  • Slice sweet potatoes into uniform rounds and arrange first layer slightly overlapping. Season with salt, oregano, and smoked paprika.
  • Spread 1 can of black beans over sweet potato layer. Season with salt and cumin.
  • Repeat layering process: add another layer of sweet potato slices, then remaining can of black beans, followed by final layer of sweet potato slices.
  • Pour remaining ¾ cup tomato sauce over the top layer.
  • Cover tightly with aluminum foil and bake for 60 minutes, or until sweet potatoes are tender when pierced with a fork.
  • Remove foil and sprinkle shredded cheese evenly over the top.
  • Return to oven uncovered and bake for 10-15 minutes until cheese is melted and golden.

Notes

Cut sweet potato slices to uniform thickness (about ¼ inch) for even cooking throughout the casserole.
For best melting results, add cheese only in the final 10-15 minutes of baking to prevent burning.
This casserole tastes even better the next day - store covered in refrigerator for up to 4 days.
Can be assembled up to 24 hours ahead and refrigerated before baking - add 10 extra minutes to cooking time if baking from cold.
Substitute dairy cheese if preferred, or try different varieties like smoked gouda or sharp cheddar.
For extra flavor, sauté diced onions and garlic in olive oil before layering with the beans.
Leftovers reheat beautifully in the microwave or oven at 350°F until warmed through.
