Ingredients

  • 4 large eggs
  • ¼ tsp smoked paprika
  • ¼ tsp salt
  • ½ lb spicy sausage chorizo, Italian, or preferred type
  • 4 large flour tortillas
  • 1 avocado diced
  • 1 cup diced tomatoes
  • 1 tbsp lime juice
  • ¼ cup chopped cilantro
  • cup shredded cheese cheddar or Mexican blend
  • Oil for cooking

Instructions

  • Combine diced avocado, tomatoes, lime juice, and cilantro in a bowl to make fresh salsa. Set aside.
  • In a separate bowl, whisk eggs with smoked paprika and salt until well combined.
  • Heat a large pan over medium heat and cook sausage until browned and cooked through. Remove sausage and set aside, leaving drippings in pan.
  • Pour eggs into the same pan with sausage drippings and scramble until just set and fluffy.
  • Warm tortillas in microwave or dry pan until pliable.
  • On each tortilla, spread a portion of avocado salsa, then add cooked sausage, scrambled eggs, and shredded cheese.
  • Fold in the sides of each tortilla, then roll tightly from bottom to top.
  • Heat a clean pan with a little oil over medium heat. Cook burritos seam-side down first until golden brown, then flip and brown the other side, about 2-3 minutes per side.

Notes

Make tortillas more pliable by warming them for 10-15 seconds in the microwave or heating briefly in a dry pan
Don't overfill burritos or they'll be difficult to roll and may burst during cooking
For meal prep, wrap assembled burritos individually in foil and freeze for up to 3 months
Substitute turkey sausage or plant-based sausage for dietary preferences
Add jalapeños or hot sauce to the salsa for extra heat
Let burritos rest for 2-3 minutes after cooking before cutting to prevent filling from spilling out
