In a separate bowl, whisk eggs with smoked paprika and salt until well combined.
Heat a large pan over medium heat and cook sausage until browned and cooked through. Remove sausage and set aside, leaving drippings in pan.
Pour eggs into the same pan with sausage drippings and scramble until just set and fluffy.
Warm tortillas in microwave or dry pan until pliable.
On each tortilla, spread a portion of avocado salsa, then add cooked sausage, scrambled eggs, and shredded cheese.
Fold in the sides of each tortilla, then roll tightly from bottom to top.
Heat a clean pan with a little oil over medium heat. Cook burritos seam-side down first until golden brown, then flip and brown the other side, about 2-3 minutes per side.
