Ingredients

For the Marinade:

  • 250 g paneer cut into cubes
  • ½ cup plain yogurt
  • 1 tsp red chili powder
  • ½ tsp turmeric
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • 1 tsp ginger-garlic paste
  • Salt to taste
  • 2 tbsp cornstarch

For the Sauce:

  • 2 tbsp oil
  • 1 sprig curry leaves
  • 2 green chilies slit
  • 1 tsp ginger-garlic paste
  • 1 tsp red chili powder
  • ½ tsp turmeric
  • 1 tbsp lemon juice
  • Fresh cilantro chopped (for garnish)

Instructions

  • Marinate the Paneer: In a bowl, mix yogurt, red chili powder, turmeric, cumin, garam masala, ginger-garlic paste, and salt. Add paneer cubes and marinate for 15-20 minutes.
  • Coat and Fry: Add cornstarch to the marinated paneer and mix well. Heat oil in a pan and fry the paneer until golden. Drain on paper towels.
  • Prepare the Sauce: In the same pan, sauté curry leaves, green chilies, and ginger-garlic paste. Add red chili powder, turmeric, and a splash of water. Cook for 1-2 minutes.
  • Toss the Paneer: Add the fried paneer to the sauce and toss well. Squeeze in lemon juice and garnish with cilantro.
  • Serve: Serve hot with onion rings and lemon wedges.

Notes

  • Spice Level: Adjust the red chili powder to suit your taste.
  • Make Ahead: Marinate the paneer ahead of time for deeper flavor.
  • Baking Option: Bake the paneer at 400°F (200°C) for 15-20 minutes for a healthier version.
  • Storage: Store leftovers in the fridge for up to 2 days.
  • Substitute: Use tofu instead of paneer for a vegan option.
