Ingredients

  • 1.5 lbs 700g boneless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 large onion finely chopped
  • 4 garlic cloves minced
  • 1 tbsp ginger minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp chili powder
  • 1 tsp garam masala
  • 1 can 14 oz crushed tomatoes
  • 2 tbsp tamarind paste
  • 2 tbsp sugar
  • Salt to taste
  • Fresh cilantro chopped (for garnish)

Instructions

  • Cook Aromatics: Heat oil in a large pan. Sauté onions until golden. Add garlic and ginger, and cook for 1-2 minutes.
  • Add Spices: Stir in cumin, coriander, turmeric, chili powder, and garam masala. Cook for 1-2 minutes.
  • Simmer Sauce: Add crushed tomatoes, tamarind paste, and sugar. Cook for 5-7 minutes until thickened.
  • Cook Chicken: Add chicken pieces and stir to coat. Cover and simmer for 20-25 minutes, until chicken is tender.
  • Garnish and Serve: Stir in cilantro and serve with rice or naan.
