Ingredients

For the Dip:

  • 8 oz cream cheese or vegan cream cheese, softened
  • ½ cup Greek yogurt or vegan sour cream
  • ½ cup buffalo sauce adjust to taste
  • 1 tsp garlic powder
  • 1 ½ cups shredded cheddar cheese or vegan cheese, divided
  • 2 green onions chopped (for garnish)

Instructions

  • Roast Cauliflower: Preheat oven to 425°F (220°C). Toss cauliflower with oil, salt, and pepper. Roast for 20-25 mins until golden.
  • Mix Dip Base: In a bowl, combine cream cheese, yogurt, buffalo sauce, garlic powder, and 1 cup cheese.
  • Combine: Fold in roasted cauliflower until coated. Transfer to a greased baking dish.
  • Bake: Top with remaining cheese. Bake at 375°F (190°C) for 15-20 mins until bubbly.
  • Garnish & Serve: Sprinkle with green onions and serve warm.
