Ingredients

  • 4 lbs 1.8 kg pork shoulder, trimmed
  • 2 Scotch bonnet peppers seeds removed (adjust to taste)
  • 4 garlic cloves
  • 1 tbsp fresh ginger minced
  • 1 tbsp fresh thyme leaves
  • 1 tbsp ground allspice
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • Juice of 2 limes
  • 2 tbsp apple cider vinegar

Instructions

  • Prepare the Marinade: Blend Scotch bonnet peppers, garlic, ginger, thyme, allspice, cinnamon, nutmeg, soy sauce, brown sugar, lime juice, and apple cider vinegar until smooth.
  • Marinate the Pork: Coat the pork shoulder with the marinade and refrigerate for at least 4 hours (or overnight).
  • Slow Cook: Place the marinated pork in the slow cooker and cook on low for 8-10 hours or on high for 5-6 hours.
  • Shred and Serve: Shred the pork with two forks and mix with the cooking juices. Serve as desired.
