Notes
Use a mandoline slicer or sharp knife to guarantee potatoes are sliced uniformly thin (about 1/8 inch) for even cooking.Any type of ham works well - leftover holiday ham, deli ham, or ham steaks cut into pieces.Sharp cheddar or Swiss cheese work particularly well, but any melting cheese will do.You can substitute cream of celery or cream of chicken soup for variety.Make-ahead tip: Assemble the layers the night before, cover, and refrigerate, then cook the next day.For crispy top, transfer to oven-safe dish and broil for 2-3 minutes after slow cooking.Leftovers keep well in refrigerator for 3-4 days and reheat beautifully in microwave.
