Ingredients

  • 1 lb ground beef
  • 1 large onion diced
  • 2 cans cream of mushroom soup
  • 1 cup corn
  • 1 cup peas and carrots mixed vegetables
  • 1 package tater tots
  • 1 cup shredded cheddar cheese optional

Instructions

  • Preheat oven to 350°F.
  • Sauté diced onion and ground beef in a skillet until beef is cooked and onions are translucent.
  • Grease a 9×13 baking dish and spread the cooked beef and onion mixture evenly.
  • Layer corn and mixed vegetables on top of the beef.
  • Spread cream of mushroom soup over the vegetables (mix if preferred).
  • Arrange tater tots evenly in straight lines on top.
  • Sprinkle cheddar cheese over the tater tots if using.
  • Bake for about 40-45 minutes until tater tots are golden and cheese is melted.
