Ingredients

For the Marinade:

  • 1/4 cup cider vinegar
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon garlic finely minced
  • 1 onion thinly sliced
  • 2 tablespoons olive oil

For the Lamb:

  • - 2 lbs lamb chops loin chops recommended

Instructions

  • In a large resealable bag, combine cider vinegar, salt, black pepper, minced garlic, sliced onion, and olive oil.
  • Mix the marinade ingredients until the salt completely dissolves.
  • Add lamb chops to the bag and coat thoroughly with the marinade.
  • Seal the bag and refrigerate for 2 hours, turning occasionally.
  • Heat a grill pan over medium-high heat.
  • Remove lamb chops from marinade and discard the used marinade.
  • Cook chops for 3 1/2 minutes on each side until well seared and cooked to desired doneness.

Notes

For oven cooking, broil the chops for about 5 minutes on each side instead of grilling
Don't over-marinate beyond 4 hours as the acid can make the meat mushy
Let chops rest at room temperature for 15 minutes before cooking for even cooking
Use a meat thermometer for perfect doneness: 130°F for medium-rare, 140°F for medium
Rib chops or shoulder chops can be substituted for loin chops
The marinade can be prepared up to 24 hours in advance
For extra flavor, add fresh herbs like rosemary or thyme to the marinade
