Ingredients

  • 1 cup green or brown lentils or ½ cup red lentils
  • 1 small onion diced
  • 1 bell pepper diced
  • 2 –3 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tbsp mustard
  • 1 tbsp maple syrup or brown sugar
  • 2 tsp apple cider vinegar
  • 1 tsp chili powder
  • ½ tsp salt
  • 1 tbsp olive oil
  • –3 cups water or vegetable broth
  • 4 burger buns or bread slices for serving

Instructions

  • Heat olive oil in a large pot over medium heat. Add diced onion, bell pepper, and minced garlic. Sauté until vegetables are soft, about 3–4 minutes.
  • Add tomato paste and stir continuously for 1 minute until fragrant.
  • Add lentils and water or broth. Bring mixture to a boil, then reduce heat and simmer for 10–15 minutes until lentils are tender.
  • Stir in mustard, maple syrup (or brown sugar), apple cider vinegar, chili powder, and salt. Simmer for an additional 3–5 minutes to allow flavors to meld.
  • Serve warm on burger buns or toasted bread.

Notes

Any type of lentils work well - red lentils cook faster and break down more, while green and brown lentils hold their shape better
Substitute bell peppers with carrots, celery, or zucchini based on what you have available
For a time-saver, use 1 can (15 oz) of drained and rinsed lentils - skip the boiling step and add them in step 4
Add extra chili powder, cayenne, or hot sauce for more heat
Make ahead and store in refrigerator for up to 4 days - flavors actually improve overnight
Freeze portions for up to 3 months for quick future meals
Adjust liquid amount based on desired consistency - use less for thicker sloppy joes
