Ingredients

  • 2 tablespoons chopped garlic
  • 1 cup chicken broth
  • 1/2 lb butter cold and cubed
  • 2 tablespoons fresh parsley chopped

Instructions

  • In a small saucepan over medium heat, combine the chopped garlic and chicken broth.
  • Bring the mixture to a boil and continue cooking until the liquid reduces by half.
  • Remove the pan from direct heat and begin whisking in the cold butter cubes one at a time.
  • Continue whisking until all butter is incorporated and the sauce coats the back of a spoon.
  • Stir in the fresh parsley and mix well.
  • Serve immediately while warm.

Notes

Keep butter cold until ready to use - this helps create the proper emulsion for a silky texture
If the sauce breaks, add a splash of cold broth and whisk vigorously to bring it back together
Don't let the sauce boil once butter is added, as this can cause it to separate
Fresh garlic works best, but you can substitute 2 teaspoons garlic powder if needed
For a lighter version, substitute vegetable broth and reduce butter to 1/4 pound
Sauce can be kept warm for up to 30 minutes in a double boiler setup
Add herbs like thyme or rosemary for variation
