Ingredients

  • 3 large beets peeled and trimmed
  • 1 red onion finely chopped
  • 2 apples cored and finely chopped
  • 2-3 tbsp fresh ginger finely chopped
  • ¾ tsp fine sea salt
  • ¼ cup sugar
  • ½ cup apple cider vinegar
  • ½ cup water

Instructions

  • Grate the peeled beets using a hand or box grater.
  • Add grated beets, chopped onion, apples, and ginger to a large pot.
  • Stir in salt, sugar, apple cider vinegar, and water.
  • Cover and bring to a boil, then simmer for about 30 minutes until beets are tender and cooked down.
  • Remove from heat and let cool completely before transferring to sterilized jars.
