Ingredients

  • 1 16 ounce bag large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 4 tablespoons butter
  • 1/2 cup white wine or chicken broth
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons minced garlic cloves
  • 1/4 cup diced onion
  • 1 tablespoon fresh oregano
  • 1/2 tablespoon black pepper
  • Salt to taste

Instructions

  • Defrost shrimp according to recommended thawing instructions if using frozen.
  • Heat olive oil in a large skillet over medium heat.
  • Add diced onion and minced garlic to the skillet and sauté for 2-3 minutes until fragrant.
  • Pour white wine or chicken broth into the pan and let reduce for 5 minutes.
  • Add shrimp to the skillet and cook for 2-3 minutes until heated through the center, being careful not to overcook.
  • Stir in butter, oregano, and parsley until butter melts completely.
  • Season with salt and black pepper to taste.
  • Serve immediately with your favorite pasta or rice.

Notes

Don't overcook the shrimp as they will become tough and rubbery - they should be pink and opaque when done
White wine can be substituted with chicken broth for an alcohol-free version
Fresh herbs can be replaced with 1 teaspoon dried oregano and 2 teaspoons dried parsley
For extra heat, add a pinch of red pepper flakes with the garlic
This dish is best served immediately but can be reheated gently over low heat
Use large or jumbo shrimp for the best texture and presentation
The recipe can easily be doubled for larger groups
