Ingredients

  • 1 large beetroot
  • 1 cup pitted dates
  • ¼ cup honey or maple syrup
  • 2 eggs
  • 3 tbsp olive oil
  • 1 tsp vanilla
  • 150 g almond meal
  • 3 tbsp cacao powder
  • 1 tsp baking powder
  • Pinch salt

Instructions

  • Preheat oven to 160°C.
  • Combine beetroot, dates, sweetener, eggs, oil, and vanilla in a food processor.
  • Add dry ingredients and mix until smooth.
  • Pour into a lined baking tray and bake for 45 minutes.
  • Cool completely before serving.

Notes

Steam or roast beetroot beforehand for easier blending and better texture
Soak dates in warm water for 10 minutes if they're very hard before processing
Can substitute almond meal with ground walnuts or oat flour for different flavors
Store covered in refrigerator for up to 5 days or freeze for up to 3 months
Add chopped dark chocolate or nuts for extra texture
Test doneness with a skewer - it should come out with a few moist crumbs
Line baking tray with parchment paper for easy removal
