1tablespooncrème fraîche or sour cream for servingoptional
Instructions
Heat butter or oil in a pot over medium heat and cook diced onion until translucent, about 3-4 minutes.
Add peas and stir to combine with the onions.
Pour in stock and cover the pot. Simmer for 2 minutes if using frozen peas, or 5-7 minutes for fresh peas, until peas are bright green and cooked through.
Remove from heat and stir in the roughly chopped fresh mint.
Blend the soup until completely smooth using an immersion blender or regular blender.
Season with salt and pepper to taste.
Serve hot with a dollop of crème fraîche or sour cream if desired.
Notes
When blending hot soup, vent your blender lid and cover with a kitchen towel to prevent splatter and allow steam to escape safelyFrozen peas work just as well as fresh and are often more convenient - just make sure to defrost them first for even cookingFor a vegan version, use olive oil instead of butter and vegetable stock instead of chicken stockThe soup can be made ahead and refrigerated for up to 3 days - reheat gently and add a splash of stock if it thickens too muchFresh mint is essential for this recipe - dried mint won't provide the same bright, fresh flavorFor extra richness, swirl in the crème fraîche while serving rather than stirring it completely into the soupTaste and adjust seasoning after blending, as the flavors will have melded together
