Ingredients

  • 1 lb portobello or cremini mushrooms sliced
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup diced onions
  • 1 cup chopped cilantro
  • Lime wedges for serving
  • Salsa or hot sauce for topping optional

Instructions

  • Prepare the Marinade: In a bowl, whisk together olive oil, soy sauce, apple cider vinegar, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
  • Marinate the Mushrooms: Add the sliced mushrooms to the marinade and let them sit for at least 30 minutes to absorb the flavors.
  • Cook the Mushrooms: Heat a grill pan or skillet over medium-high heat. Add the marinated mushrooms and cook for about 5-7 minutes, stirring occasionally, until they are tender and slightly charred.
  • Warm the Tortillas: In a separate pan, warm the corn tortillas for about 30 seconds on each side until pliable.
  • Assemble the Tacos: Place a generous portion of the cooked mushrooms on each tortilla. Top with diced onions, chopped cilantro, and any additional salsa or hot sauce you desire.
  • Serve: Squeeze fresh lime juice over the tacos and enjoy them warm.
