Ingredients

  • 2 medium potatoes peeled and diced
  • 1 small cauliflower cut into florets
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 large onion finely chopped
  • 3 garlic cloves minced
  • 1- inch ginger minced
  • 1 green chili chopped (optional)
  • 2 medium tomatoes diced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh cilantro chopped (for garnish)

Instructions

  • Prep the Vegetables: Wash and cut the cauliflower and potatoes. Chop the onions, garlic, ginger, and tomatoes.
  • Cook the Aromatics: Heat oil in a pan. Add cumin seeds, then sauté onions until golden. Add garlic, ginger, and green chili. Cook for 1-2 minutes.
  • Add Spices and Tomatoes: Stir in turmeric, coriander powder, and salt. Add tomatoes and cook until soft.
  • Cook the Vegetables: Add potatoes and cauliflower. Cover and cook for 15-20 minutes, stirring occasionally.
  • Finish and Serve: Sprinkle garam masala and cilantro. Mix well and serve hot with rice or bread.

Notes

  • Spice Level: Adjust the green chili or add red chili powder for extra heat.
  • Make Ahead: The curry tastes even better the next day as the flavors develop.
