Ingredients

  • 1 large head of cauliflower cut into florets
  • 1 cup all-purpose flour or gluten-free flour
  • 1 cup milk or dairy-free alternative
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ cup buffalo sauce
  • 2 tbsp butter or vegan butter

Instructions

  • Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, milk, garlic powder, paprika, and salt.
  • Toss cauliflower florets in the batter until evenly coated.
  • Arrange cauliflower on the baking sheet and bake for 20-25 minutes, flipping halfway through.
  • In a small saucepan, melt butter and mix with buffalo sauce.
  • Toss baked cauliflower in the buffalo sauce mixture, then return to the baking sheet.
  • Bake for an additional 5 minutes to set the sauce.
  • Serve hot with dipping sauce and garnishes.
