Ingredients

  • 4 corn tortillas
  • 4 large eggs
  • 2 tbsp vegetable oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 2 cups diced tomatoes fresh or canned
  • 1-2 chili peppers jalapeño or serrano, finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced
  • Salt and pepper to taste
  • Optional toppings: avocado queso fresco, sour cream

Instructions

  • Prepare the Sauce: Heat 1 tbsp oil in a skillet. Sauté onions and garlic until soft. Add tomatoes and chili peppers. Cook for 5-7 minutes. Season with salt, pepper, and lime juice. Stir in cilantro.
  • Fry the Tortillas: In the same skillet, heat 1 tbsp oil. Fry tortillas until crispy, about 1-2 minutes per side. Drain on paper towels.
  • Cook the Eggs: Fry eggs in the skillet to your preferred doneness.
  • Assemble: Place a tortilla on a plate. Top with a fried egg and spoon the sauce over it. Garnish with optional toppings.
