Ingredients

  • 3 cups shredded cooked chicken
  • 2 cups enchilada sauce store-bought or homemade
  • 2 cups shredded cheese cheddar and Monterey Jack blend
  • 8-10 flour or corn tortillas
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • Fresh cilantro diced tomatoes, and sour cream for garnish

Instructions

  • Prepare the Filling: In a bowl, mix shredded chicken, 1 cup of cheese, chili powder, cumin, garlic powder, and ½ cup of enchilada sauce.
  • Assemble the Enchiladas: Spread ½ cup of sauce in a baking dish. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
  • Add Sauce and Cheese: Pour the remaining sauce over the tortillas and sprinkle with the remaining cheese.
  • Bake: Bake at 375°F (190°C) for 20-25 minutes, until bubbly and golden.
  • Garnish and Serve: Top with cilantro and serve with your favorite toppings.
