Ingredients

  • 3 cups fresh or frozen blueberries
  • 2 tbsp lime juice about 1 lime
  • 1 tbsp lime zest
  • 2 –3 tbsp honey or maple syrup
  • Pinch of salt
  • ½ tsp vanilla extract optional

Instructions

  • In a saucepan, combine blueberries, lime juice, and honey. Simmer over medium heat for 10–15 minutes until thickened.
  • Remove from heat, blend until smooth, then stir in zest and salt.
  • Optional: Simmer another 5–10 minutes for a thicker consistency.
  • Cool and transfer to jars. Store in the fridge.

Notes

  • Thickness Tip: For a thicker butter, cook longer or add 1 tsp chia seeds after blending.
  • Freezing: Portion into ice cube trays for easy use later.
  • Spice Variation: Add ¼ tsp cinnamon or ginger for warmth.
  • No Blender? Mash with a fork for a chunkier texture.
  • Canning: Process in sterilized jars for 10 minutes in a water bath for shelf-stable storage.
