Ingredients

  • 1 pound shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese Mexican blend or Oaxaca cheese
  • 8 small corn or flour tortillas
  • Fresh cilantro chopped, for garnish
  • Lime wedges for serving

Instructions

  • Sauté the Shrimp: In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until fragrant and translucent. Then, add the shrimp and season with chili powder, cumin, salt, and pepper. Cook until the shrimp are pink and fully cooked, about 3-4 minutes.

  • Melt the Cheese: Sprinkle the shredded cheese over the shrimp mixture in the skillet. Cover the skillet with a lid for a minute to allow the cheese to melt.

  • Warm the Tortillas: In a separate skillet, warm the tortillas until soft and pliable.
    8 small corn or flour tortillas
  • Assemble the Tacos: Place a generous portion of the shrimp mixture onto each tortilla. Top with chopped cilantro and a squeeze of lime juice.
